These are planning averages for established hives, not promises. Drought, wet springs, and mite crashes move the needle more than optimism. Ask a local association what they pulled last year before you order gift jars in January.

Locked example: 5 average hives → 5 × 40 = 200 lb → 200 one-pound jars or about 267 twelve-ounce jars. Order lids and labels with a 10% buffer; extraction days create sticky surprises.
Why year one is different
A new colony spends nectar on wax and brood. Frames that look “full enough to steal” in September may be the difference between a living hive in March and a box of dead bees. Feed syrup when appropriate under local mentorship; do not confuse feeding with harvesting. Resist the social-media urge to post a first-year extracted bucket.
Year two, if the colony is strong and capped frames clearly exceed winter needs, then apply the 25 / 40 / 60 table for your region class.
Flows, supers, and swarming
Surplus arrives in flows — weeks when nectar is abundant — not as a steady drip. Have supers ready before the flow, not after bees fill the brood nest and leave in a swarm. Medium supers commonly hold on the order of tens of pounds each when full; match equipment to your expected surplus rather than buying a tower “for looks.”
Extract when frames are largely capped (moisture low enough to store). A refractometer removes guesswork. Uncapped nectar can ferment in the jar — patience beats cloudy science experiments.
Regional honesty
“Average” nationwide means little on a rooftop in a food desert or beside irrigated alfalfa. Classify your yard as poor / average / strong using local mentors, then revisit after two seasons of notes. Urban forage can surprise; monoculture deserts disappoint. Planting for bees helps — garden spacing and bloom calendars are adjacent hobbies (see garden tools) — but a few bee-friendly beds will not turn a poor site into 60 lb overnight.

Costs beyond the jar
Harvest pounds are not profit. Packages, queens, treatments, sugar for emergencies, jars, and your time stack up. A 40 lb surplus at gift-economy pricing still has to cover winter losses. Keep bees for pollination, craft, and learning first; treat jar sales as a bonus after the colony is clearly thriving.
Mite management is not optional in most of North America. A dead hive yields 0 lb regardless of region class.

Warm honey flows; cold honey fights you. Have food-grade buckets, filters, and wet towels ready. Schedule extraction when you can clean the same day — ants and bears (where present) RSVP quickly. Bottle into hot, dry jars; label with year and yard. Keep a few pounds unmarked for winter emergency feed if local practice allows feeding your own honey (follow disease-aware guidance in your area).
Sell or gift only surplus you are proud of. Cloudy, high-moisture honey damages your reputation faster than it empties the pantry. When in doubt, leave another frame for the bees — especially heading into a light fall flow.
