Average honey per hive — why it depends

Surplus honey is what you can remove after the colony keeps winter stores. Our planning midpoints are 60 lb per hive in strong forage regions, 40 lb in average areas, and 25 lb where nectar is thin. Five hives in an average region therefore project 5 × 40 = 200 lb. That is roughly 267 jars at 12 oz each, or 200 jars at 1 lb (16 oz) each. Weather, bloom timing, and mite pressure can cut a “good” year in half — use these numbers for jar orders and extractor time, not as a contract with the sky.

Region and forage quality

“Strong” usually means overlapping major flows (clover, basswood, tulip poplar, citrus, or solid agricultural forage) with enough unbroken forage within a few miles. “Average” is a mixed suburban or mixed-farm landscape with some dearths. “Poor” is desert fringe, continuous monoculture with spray timing that kills forage, or high hive density competing for the same bloom. Local bee clubs often know which label fits your county better than a USDA zone map.

First-year reality

Do not harvest first-year hives — leave honey for winter stores. Packages and nucs spend their first season drawing comb and raising bees. Pulling “just a little” honey can leave them light going into winter. This calculator’s surplus figures assume established colonies. If half your yard is first-year, count only the veterans when you size harvest gear.

Harvest logistics

Add supers ahead of the main flow so bees have space instead of crowding and swarming. Harvest when a high share of cells are capped and moisture is in a safe bottling range (many keepers target under about 18.6%). Leave the colony a full food reserve for your winter length — northern yards need more left behind than short-winter regions. Extract on a warm day so honey flows, and keep wax cappings for later rendering. A borrowed or club extractor often pays for itself versus sticky kitchen experiments with crush-and-strain alone when you cross a few hundred pounds.

Common mistakes

  • Harvesting first-year hives. Short-term jar count, long-term deadouts.
  • Ignoring mites. Varroa collapse mid-season erases any forage advantage your region label promised.
  • Bottling wet honey. High moisture ferments — check with a refractometer before you print fancy labels.
  • Ordering jars after the extract. Retail lids sell out in peak season; run the jar math before the flow peaks.

If you sell under cottage-food rules, keep harvest notes: yard location, approximate floral source, and moisture reading. Buyers and inspectors both appreciate a paper trail. For home use, rotate older jars forward so crystallized honey gets gently warmed and used rather than forgotten on a cellar shelf.
