Canning season fails in the pantry before it fails in the pot — usually because the jars ran out on a Tuesday night of tomatoes. Plan jars from pounds, using our pack-yield table (tomatoes 3 lb/quart, green beans 1.5, and the rest below). The canning jar calculator does the ceil math; this article shows how to build the shopping list before the vines ripen.

Add a shopping buffer for breakage, siphoning, and “we picked three more pounds” — many keepers use about 10% extra jars as a habit (not encoded in our data file). Sixty pounds of tomatoes → buy flats for 22 quarts if you like that margin.

Building a season inventory

  1. List what you will can (not everything that grows).
  2. Set pound targets from meals and last year’s empty shelves.
  3. Convert pounds → jars with the table.
  4. Count jars you already own by size (quart vs pint).
  5. Buy new jars/flats for the gap + buffer.
  6. Schedule canner days on the calendar before peak harvest.

That is a serious flat order — better in March than at 9 p.m. in August.

Garden → pantry alignment

Beans for twenty quarts need 30 lb at 1.5 lb/quart. At 0.5 lb/plant bush-bean yield, that is on the order of 60 plants — small footprints, still a real row. Plan the bed before you romanticize the pressure canner.

Lids, rings, tools, and time

Flats: single use. Count jars × seasons. Rings: reusable; inspect for rust. Jars: inspect rims for nicks. Headspace, venting, and altitude adjustments belong in your tested guide — not in improvisation.

Time is inventory too. A 60-lb tomato day is an all-day event with prep, hot packs, and cooldown. Batch by variety: sauce day, pickle day, bean day. Cold-pack fantasies die when the kitchen hits 95°F; prep the night before when you can.

Water-bath vs pressure: high-acid products (properly acidified tomatoes, pickles, most fruits/jams) vs low-acid vegetables (beans, corn, carrots). Do not invent shortcuts. If you are new, start with jam or pickles from tested recipes while you learn the canner.

Storage and rotation

Cool, dark, dry. Label lids with product and date. Eat oldest first. A jar that sits five years is a craft project, not food security. Keep a clipboard tally: jars in, jars opened — next year’s plant order writes itself.

Discard compromised seals. When in doubt, throw it out — pantry space is cheaper than a hospital visit.

Safety and altitude (non-negotiable)

This article sizes jars; it does not replace the USDA Complete Guide or your extension’s altitude tables. Low-acid foods need pressure canning. Tomatoes need proper acidification when water-bath canned. Botulism is not a branding problem — it is a biology problem. If a jar fails to seal, refrigerate and eat soon or freeze, per current guidance — do not “reprocess inventively.”

Altitude increases process time or pressure; flatlanders following sea-level charts in the mountains risk underprocessing. Look up your elevation once and tape it inside the cupboard door.

Sharing and gifting

Cottage-food rules vary by state. Selling home-canned low-acid vegetables is often restricted. Gifts to family still deserve the same process discipline. Label allergens (honey in some jams, etc.) and dates. A beautiful unlabeled jar is a mystery your future self will not thank you for.

Coordinate with neighbors: one household does pickles, another does beans, and you trade — but only if both kitchens follow tested methods. Barter does not sanitize shortcuts.
